Louise Bees Spring Honey is made between April and May when the bees are feeding on the abundance of the bright yellow oilseed rape flowers. They love it and got bonkers for it. It has a high glucose/fructose ratio and will granulate quickly, so it has to harvested quickly before it sets in the frames.
Louise Bees honey is simply filtered to remove any debris so it contains plenty of oilseed rape pollen, you can actually see the tiny grains in the jar. This can often result in the honey granulating - this is natural but it can easily be made runny again by gentle heating.
