Black bean sauce is a real kitchen all-rounder, it's great for marinating, stir-frying or simply to drizzle over rice and noodles. It's made from fermented soy beans that have been preserved in salt. The beans develop their intense dark color as a result of the fermentation process.
Beef or chicken in black bean sauce is a real classic, but it's equally as good with aubergine, courgettes and bok choy.
