It was simply a way in Korea of preserving vegetables but in more recent times has gained global recognition for it's health properties. Full of probiotics, antioxidants and nutrient dense vitamins and minerals, Kimchi is a tasty and brilliant way of rounding off a balanced diet.
In Korean, Kimchi is hugely popular and almost eaten with every meal. It's great served with rice, noodles, added to soups and stews, think of it like a condiment that will add multiple layers of additional flavour.
