Yakitori in Japan really just refers to grilled chicken on skewers. It's often cooked over charcoal which imparts a lovely smoky flavour. Yakitori sauce uses soy as it's base and it's simmered with sake, mirin and sugar to create a thick, syrupy sauce that sticks to the chicken. This ready to go sauce is just perfect for a quick fix of heavenly grilled chicken with that lovely combination of salty, sweet, sticky glaze.

Yakitori is often served in Japan as a bar snack, perfect with a cold beer. To make Yakitori into more of a meal, serve with Japanese rice balls known as 'Onigiri'. These are made with short-grain rice or sushi rice and are often toasted to give a little crunch on the outside.
