Japanese mayonnaise is only just being discovered here in the UK. Kewpie mayonnaise was created in 1925 and is hugely popular across Japan and also across North America - celebrated American chefs such as David Chang (Netflix Series Ugly Delicious) are obsessed by it, describing it as 'mayo on crack'. It is sweeter and sharper than traditional mayo and has an almost salad cream like taste.
So what's the secret? Kewpie only use egg yolks in their mayo (most commercial mayo brands will use yolks and whites). They also brew their own special vinegar with apple and malt to create a deeper, richer mayonnaise flavour.
