The combination of chilli and egg is a classic in many parts of the world. Add in some lovely black beans and super tasty tostados (baked corn tortillas) and you have yourself the perfect Mexican breakfast or brunch or light lunch. It's a popular weekend lunch in our house. What's more, this dish is naturally gluten free.
