Our French green speckled lentils are basically the same as Puy lentils, but not grown in the AOC protected region of Le Puy in France! If a recipe requires Puy lentils and you can't get your hands on any, just use these green lentils instead.
These lentils do not require soaking, but require cooking. Place in a saucepan and cover with water and boil for 20 minutes or until cooked. It;s best not to add salt during the cooking as this will toughen the skins.
