Burrata first started appearing on restaurant menus here in the UK about 10 years ago and we were all blown away by this incredibly creamy and delicious soft cheese from Puglia in Italy. It's basically a round shell of mozzarella filled with Stracciatella, which is a mix of shredded mozzarella and cream. It has an incredibly fresh and indulgent taste and is such a joy.
It's amazing simply eaten at room temperature with a drizzle of extra virgin olive oil, some roasted tomatoes and flatbreads. However, it will add so much to salads, simple pasta dishes, warm roasted root vegetables and torn over pizza (once already cooked).
Our Burrata is made by the Maldera family who have been making cheese since 1972. One of the difficulties with Burrata is that it has an incredibly short shelf life. We have a brilliant frozen product, there are 3 x 100g balls in each pack and they defrost perfectly, giving you all the flavour and texture you would expect.
To defrost fully - remove from packaging and defrost at room temperature for around 4 hours.
