Bull Head barbecue sauce is nothing like BBQ sauce you might expect to find in the Southern States of America. Often referred to as Sa-Cha sauce, it's more like a Chinese satay than the Kansas city classic. To be honest, this sauce is a bit of a find and one that you'll be reaching for all the time, it's like dropping an umami bomb into your recipe.
Mix this with Shaoxing wine, soy sauce, garlic, sesame oil and some finely sliced bright red chillies for a brilliant sauce that will go perfectly in stir-fries, as a dipping sauce, mixed through rice or even added to dressings.
Dried fish and shrimp provide a fair amount of the big flavours in this jar - garlic, sesame, ginger and white pepper take the dial up a further notch. Make sure you give everything a stir before using, there will be a layer of oil at the top of the jar with the thick sauce below.
