Provolone is one of the classic Italian cow's milk cheeses with origins dating back to the19th century. First made in the Naples region, there are different types of provolone depending on it's age. This Auricchio Giovane is a young provolone with a soft texture and a delicate flavour.
One of the classic ways to eat provolone is to cut thick slices, breadcrumb the outside and fry - Milanese style. It's also great in sandwiches, on pizza, in salads,
