Preserved lemons are synonymous with North African food, they instantly conjure thoughts of Moroccan Tagines. However, the use of preserved lemons has spread across the Mediterranean. The zest and sharpness of a fresh lemon has been transformed into intense lemon flavour with a salty, umami kick. They pair up really well with all kinds of meat, fish and vegetables and will completely transform the flavour of any dish, a little goes a long way.
