I love the way that Asian cuisine seems to have lots of interesting ways of seasoning food - soy sauce, fish sauce, miso etc. Oyster sauce was invented as a seasoning for rice, back in the 19th century. Despite being made with oysters, it doesn't have a fishy taste or smell. It's great used in stir fries and will add a rich, sweetness to your noodles.
You can also use oyster sauce as a seasoning for soups, stir fried greens, to make dressings, just think where you might want a little umami rich seasoning and add a splash. Oyster sauce is a strong flavour so don't be too heavy handed with the bottle.
