Pane Carasau (sometimes called Music Bread) is a traditional Sardinian flatbread. It is thin and crisp, usually in the form of a dish half a meter wide. It is made by taking baked flat bread, then separating it into two sheets which are baked again.
Drizzle them with olive oil, sprinkle over a little salt and warm them in the oven for 30 seconds - they make the best pre dinner snacking breads. They are also lovely eaten with cheese and honey or for a real treat, try grating a little pecorino over them and baking them or use different flavoured oils.
Ingredients: durum wheat, bran flour, water, yeast, salt.
